
CHICAGO, June 15, 2026 — Fedele Bauccio, who proved the advantages and feasibility of serving locally and sustainably produced foods in high-volume settings during his long tenure as CEO of the foodservice contractor Bon Appetit Management, is stepping down.
He will be succeeded as CEO sometime later this year by Saajid Kahn, according to Compass Group, Bon Appetit’s parent company. Kahn is currently CEO of Compass Group Canada and one of its subsidiaries, ESS North America, a contractor that runs the foodservice operations of remote facilities like logging camps and military installations.
Bauccio will continue to serve Bon Appetit after the transition as executive chairman.
The transition marks a milestone for Bon Appetit, one of the more upscale operators within Compass Group’s extensive portfolio of foodservice management companies. Compass’ other U.S. holdings include Chartwell, Flik, Canteen, Restaurant Associates, Levy, Wolfgang Puck Catering and Morrison Healthcare.
Bauccio has led Bon Appetit since co-founding the management concern in 1987. During his 39-year run, he positioned the operation as a high-end option for corporations, colleges, universities and cultural institutions that were looking for an outside party to run their onsite foodservice operations.
He was an early and outspoken advocate of delivering the same level of culinary execution that a consumer might find in a small, independent restaurant. In particular, he called for more from-scratch cooking of ingredients that were locally sourced from socially responsible producers.
In the process, he proved that those approaches to purchasing and production were not unfeasible for high-volume settings.
Bauccio's pioneering work led other onsite managers to upgrade their games in the competition for management contracts.
Kahn is a 30-year veteran of Compass Group, having worked for the company in Europe and Asia as well as North America. He will work with Bauccio on a transition whose end date was not revealed by Compass.
